“𝘽𝙚 𝙩𝙝𝙖𝙣𝙠𝙛𝙪𝙡 𝙛𝙤𝙧 𝙩𝙝𝙚 𝙩𝙤𝙪𝙜𝙝 𝙩𝙞𝙢𝙚𝙨 𝙛𝙤𝙧 𝙩𝙝𝙚𝙮 𝙨𝙝𝙖𝙥𝙚 𝙪𝙨 𝙞𝙣𝙩𝙤 𝙩𝙝𝙚 𝙥𝙚𝙤𝙥𝙡𝙚 𝙬𝙚 𝙖𝙧𝙚 𝙢𝙚𝙖𝙣𝙩 𝙩𝙤 𝙗𝙚𝙘𝙤𝙢𝙚” July 30th 2021 marked our 10th wedding anniversary. 10 years ago today we were quite literally in the thick of things with Andy’s Meniere’s Disease. Leading up to our wedding, for 63 days to be exact, Andy had been in a continuous unrelenting Meniere’s episode. For more than 10 years we have been on this journey of a low salt lifestyle. For 10 years (knock on wood) Andy has not experienced a “drop session”. Perhaps it is my continuous love for him 😉 or our unrelenting commitment to a low salt diet, our lives have been forever changed. The tough times we experienced leading up to our wedding and on our wedding day shaped both of us for what has become or new normal. While Andy is not symptom free, he continues to have tinnitus (ringing in his ears) complete deafness in his left ear, the feeling of fullness in both ears and the occasional mini episode, our life has forever changed because of #theunsaltedlife. I know now that I was meant to become a low sodium expert, I was meant to become Andy’s rock when he needed me most, I was meant to create over 300 recipes and start Low Salt Kitchen to help others, and I am meant to finish my dream of becoming a cookbook author so I can help many more people to come. Here is to celebrating family, celebrating #theunsaltedlife and following your dreams.
